Remembering when I was a little doll playing around listening to the talks (in the background) between two wonderful ladies sharing delicious food recipes.
My grandma used to engage me in little baking tasks like gathering and mixing ingredients. I wasn't aware at that time that she was planting a seed deep inside that will grow as a classy chef one day.
Of course, those are the golden memories of my life when I used to go to my grandmother's house, who was the best chef in the whole family. That's when she synchronized all her cooking skills in me.
Luckily, I am a part of this inherited chain. The talent she transferred to my mother and then me. Yes, I strongly hope to see even better cooking skills in my little one (Oh, why I am thinking too far ahead).
Coming back to my story, at the age of seven, when other girls of my age were playing with dolls, I was making local sweets and selling them from our home. That was not a need of time, rather that was my foundation phase, and I had no idea that my love for food would take me where I am today.
I have prepared thousands of recipes over the years. I love twisting ingredients to make the healthier version of recipes. Today I am here with a delicious and nutritious banana bread recipe.

We, Caribbean people, love to have it over tea parties or enjoy breakfast with a hot coffee cup. I prefer it over chocolate desserts. Quite the mouthful, but so simple and so YUM!
The wait is over. Hey baking lovers, are you ready? It’s Baking O’clock!!! Let’s look into the recipe ingredients and baking instructions.
INGREDIENTS:
➢ 250 GRAMS ALL PURPOSE FLOUR
➢ 1 TEASPOON BAKING POWDER
➢ 1⁄2 TEASPOON BAKING SODA
➢ 1⁄2 TEASPOON CINNAMON
➢ 1⁄2 SALT
➢ 115 GRAMS MELTED UNSALTED
BUTTER
➢ 100 GRAMS GRANULATED SUGAR
➢ 50 GRAMS of BROWN SUGAR
➢ 4 RIPE BANANAS
➢ 2 LG EGGS
➢ 2 TEASPOON VANILLA
INSTRUCTIONS
1. Preheat electric oven to 375°F. Line loaf pan with parchment paper/baking paper. Spray with non-stick cooking spray so that it sticks on it correctly.
2. Take overripe or fresh bananas in a large mixing bowl and mash them using a fork.
3. Mix all the dry ingredients and gradually add butter and sugar.
4. Add mashed bananas and eggs (room temperature) to the mixture, one at a time.
5. Combine well until it turned into a smooth and creamy batter.
6. Pour batter into prepared lined loaf pan and smooth top. Now add granola and a mixture of nuts over the top for an elegant texture.
7. Put it in the preheated oven and bake for 35-45 minutes or until a wooden stick inserted into the center comes out clean.
8. Remove the banana bread from the baking oven and place it on a wire rack. Let it cool for 20 minutes, carefully invert, remove nuts and granola loaded banana bread from loaf pan,
and put it back on a wire rack to cool completely.
